Fig, Arugula & Goat Cheese Pizza

Fig, goat cheese and arugula team up to make the perfect pizza!

Yield: 2 10-inch pizzas

Instructions

When making pizza at home, there are a few ways to go. Indoor oven, outdoor grill, or portable pizza oven.

If using your kitchen oven, preheat it to 500° and a use a pizza stone or a sheet pan. You can also use a pizza stone in your outdoor grill at high heat or you can use a portable pizza oven.

In a sauté pan, heat the olive oil and sauté the onions until they begin to brown. Set aside to cool.

Cut the prepared dough in half to make 2 pizzas. On a floured surface, roll out each half to your desired size and shape.

Drizzle the dough with olive oil, and top with onions, figs, and goat cheese, and season with salt and pepper. *Sprinkle a small amount of coarse corn meal on the heated pizza stone or sheet pan right before placing the pizza on it for a nice texture to the bottom.

The pizzas will cook between 10 minutes in the oven or as little as 2 minutes if using a portable pizza oven. Cook until the crust is lightly browned. Remove pizzas from heat, top with fresh arugula and drizzle with balsamic vinegar.
