Pre-heat oven to 350 degrees F.
Peel and cut sweet potatoes into 2-inch pieces and add to a lightly oiled large oven proof casserole dish. Drizzle the potatoes with olive oil and season with salt and pepper. Toss to coat well.
Layer the kale on top of the potatoes. Place the chicken thighs on top of the kale and drizzle with remaining olive oil and season with salt and pepper.
Bake in oven for 45 minutes, or until chicken is cooked through. For additional browning, place under the broiler for a couple of minutes.
