Tons of flavor cooked up in one pan. Simply delicious!
Heat olive oil in a very large sauté pan and cook the onion for a few minutes until softened. Add the garlic, chicken and rosemary, and season with salt and pepper. Continue cooking until chicken is browned, stirring occasionally. Add in the wine and scrape up the browned bits from the bottom of the pan. Add the artichoke hearts, spinach, lemon zest and juice. Cook until Spinach is wilted.
Serve as is or over pasta.
