The perfect crunch for lunch!
Yield: 6 Large Toasts
Toss the celery, apple, walnuts, olive oil, lemon juice and salt and pepper in a small bowl until everything is mixed and evenly coated. Set aside.
Meanwhile, toast the bread. While the toast is still warm, spread an even layer of cheese onto it and top with a heaping cup of celery salad. Drizzle with honey. Repeat with remaining toast, salad, and cheese.
