Jazz up pizza night with unexpected flavors and toppings. Serve alongside fresh Spring Mix drizzled with a tangy balsamic vinaigrette. Yum!
Preheat oven to 400 degrees F.
Place the cubed squash on a sheet pan and toss with 2 tablespoons of olive oil, salt, and pepper. Roast for 30 minutes, until tender. Set aside to cool.
Increase oven to 450 degrees F.
On a floured surface, roll out the dough and form into your favorite pizza shape.
Sprinkle corn meal on a sheet pan or pizza pan, and place dough on top. (If using a pizza stone, heat the stone in the oven and assemble pizza on a pizza paddle).
Drizzle 2 tablespoons of olive oil over the dough and out to the edges. Top with cheese, butternut squash, and the apple slices. Season with salt, pepper, and thyme.
Place in oven for 10-12 minutes. Slice and enjoy.
