Go green and healthy with this delicious and simple soup!
In a large pot, heat oil and sauté the onion and celery for 5 minutes. Add the garlic and cook another minute. Add the thyme and season with salt and pepper. Add the broth and bring to a boil. Reduce heat and add in the broccoli and potato.
Simmer for approximately 20 minutes until the potato is soft. Add in the spinach and cook another minute. Using an immersion blender or a regular blender, blend the soup until smooth.
