Asian Salad

Ingredients
- 1 (5 oz.) package Olivia’s Organics Spring Mix
- 2 large carrots – peeled and shredded
- 1 red bell pepper – julienned
- 2 cups red cabbage – shredded
- 1/2 cup sliced almonds
- 2 tablespoons peanut butter
- 2 tablespoons rice vinegar
- 2 tablespoons extra virgin olive oil
- 2 tablespoons honey
- 2 teaspoons soy sauce
- 1 teaspoon sugar
- 1/2 teaspoon sesame oil
- 1/2 teaspoon Sriracha
- 1/2 teaspoon salt
- 1 teaspoon fresh ginger – peeled and grated
- 1 garlic clove – minced
- 1/2 fresh lime – juiced
Instructions
- Combine salad ingredients together in a large bowl.
- Blend all dressing ingredients in a blender or food processor until smooth.
- Add dressing to salad and serve.
