This crowd pleaser is delicious served warm or chilled.
Yield: 6-8 Servings
Cook orzo according to package directions. Drain the pasta, rinse with cold water and place in a large serving bowl.
Add the corn and tomatoes to the bowl, season with salt and pepper, and stir in 1 cup of the dressing to start. Add in the arugula and toss everything to combine. Depending on taste and preference, add more dressing as desired.
