“A world without tomatoes is like a string quartet without violins.”
That line from Laurie Colwin’s “Home Cooking” sums up how we feel about tomatoes, especially this time of year. A little bit sweet, a little bit tart, all kinds of juicy and refreshing, there’s nothing better than a ripe tomato as summer winds down.
Whether you’re growing your own or just can’t resist ‘em at the farmer’s market or produce section, lots of us find ourselves with one-too-many tomatoes right about now. Fear not! We’re devoting this entire newsletter to terrific tomato recipes. Enjoy!
Avocado, Tomato & Pancetta Club:
Move over, BLT, and make way for the ATPC! Fresh, thickly sliced tomatoes star in this sensational sandwich, which gets a little help from Olivia’s Kale & Spinach Pesto.
Grilled Shrimp & Heirloom Tomato Salad:
Heirlooms are the fancy, more creative counterpart to the traditional tomato. This recipe makes the most of their beauty and packs a punch of healthy protein with shrimp and garbanzo beans.
Roasted Tomato, Kale & Ricotta Toast:
Plenty of purists will tell you that there’s no need to cook a perfect summer tomato. As the two recipes above demonstrate, they’re not wrong! But the smokey sweetness of slow roasted cherry tomatoes is delicious any time of year. Use up those extra cherry T’s with this sensational starter.
There you have it! Three easy recipes that celebrate the tasty tomato in all its glory.
