It’s hot out there! From Portland Maine to Portland Oregon, temperatures hit near record highs over the last week. With heat approaching (and sometimes passing) triple digits across the country, we’re doing everything we can to stay cool.
Like it or not, that goes for mealtime too. These days we’re trying to avoid any recipes that require extra heat or hard work in the kitchen.
This week, we’re bringing you a fresh batch of Olivia’s recipes that all follow one rule – no stovetop or oven required. Check ‘em out!
Kale Peanut Butter Smoothie:
There’s no better time to reach for that blender than the dog days of summer. Baby kale and peanut butter make up the backbone of this breakfast/lunch/snacktime meal replacement, but the variations are endless!
Coconut-Lime Popsicles:
Nothing says “summer” like a popsicle. These perfect pops get a splash of green from baby spinach that kids won’t mind eating and a sensational creaminess from coconut milk. And if you’re in the mood for a happy hour treat, rum makes a great addition …
Baby Butter Chicken Salad: Helloooo rotisserie chicken. These pre-cooked poultry miracles are the secret to delicious entrees that beat the heat. Olivia’s Organics celery adds that classic chicken salad crunch – and thick slices of in-season tomatoes are a must.
