Most Americans lost an hour of snooze time over the weekend. But that time slippage has a silver lining – it means more light into the evenings and nicer weather is on the way! Rising temperatures equal more active weekends, more evening runs, and more fresh fruits and veggies at the market. It’s the perfect opportunity to “spring forward” into healthier habits!
This week, we’re sharing a few ideas to keep those healthy habits going by incorporating one of our favorite greens into more of the meals we eat. We believe spinach makes everything better! Read on for sweet and savory recipes that get a boost of color, flavor, and nutrition by adding a bit of spinach.
Spinach & Sun-dried Tomato Burger – Meatless burgers are all the rage these days, and this recipe offers a tasty combination of flavors and textures. They’re the perfect excuse to fire up the grill for the first time this season!
Jambalaya with Spinach – This creole classic has as many variations as there are people making it. No surprise here, but the Olivia’s version features a heaping handful of spinach, chicken sausage, shrimp, and oh so many spices.
Irish Soda Bread – Keep the St. Patrick’s Day spirit going with this colorful take on a traditional Irish recipe featuring baby spinach. Serve with butter, as the recipe suggests, or upgrade to a homemade fruit topping.
Easy Fudge with Spinach – You know we love putting spinach in our brownies and our cookies. Well, this chocolaty treat is no exception! Finely chopped spinach (plus walnuts) add a filling umph to this delicious fudge.

My FAVORITE food swap is your amazing BABY SPINACH, which I chop fine and add to my turkey meatballs, turkey cottage pies and chicken pot pies!!! Yummy!
My husband and I both have family histories of diabetes. We are very conscious of our “empty carb” intake. We have swapped spinach sautéed in olive oil with garlic and pine nuts for pasta when we have cacciatore, shrimp fra diavolo or meatballs. We use your large box of spinach for our family of four.
I have been adding spinach along with the other sautéed veggies I add to my pasta sauce. It adds a bit of extra flavor and no one really notices it. I’m definitely going to try adding it to the mac n’ cheese the next time!
