Halloween night is less than a week away. It’s always a hectic evening, with decorating, last-minute costume alterations, and candy purchases (you always go through more than you think you will!). The last thing you want to think about on a hurried Halloween is pulling together a complicated or time-consuming dinner. We have you covered!

In this week’s newsletter, we’re sharing some of our favorite recipes for a busy Halloween night. Each dish had to check three boxes: It had to require very little active prep, be scalable to feed a large crew, and satisfy that craving for delicious fall flavors. Read on!

Stuffed Pepper Soup:
This recipe is a hit every time we post it. This one comes together quickly and can sit on the stove for most of the evening. In fact, that extra time gives the flavors a bit more time to combine and get even tastier!

Instant Pot Beef Stew:
Few dishes are more comforting on a chilly evening than a piping hot bowl of beef stew. This Instant Pot version delivers those rich flavors in a fraction of the time. Just don’t skimp on the veggies!

Butternut Squash Curry:
When you’re on hour two or three of trick or treaters, you need a dish that will warm you from the inside out. Look no further than this delicious curry, which uses in-season butternut squash and chickpeas (and a boatload of spices) for a sensational flavor combo.
