Recipes that Make Salad the Star of Dinner!

Move over, side salads and starter salads. This week, we’re spotlighting salad recipes from the Olivia’s archive that can serve as an entire meal. These recipes are filling, delicious, and healthy. And they’re easy to pull together for a quick weeknight dinner or late lunch. Check ‘em out!

Steak Salad:
Steak combines with peaches (or nectarines) for a delicious and filling flavor combo atop a bed of Olivia’s Organics Spring Mix. Make sure you’re using red onion in this recipe – it makes a big difference in bringing all the flavors together.

Chicken & Greens Protein Salad:
Avocado, kale, walnuts, and chicken combine for a salad that works as a main course! Using store-bought rotisserie chicken means you’ll have time to prep the amazing four-ingredient dressing in this recipe. Double it and use it on salads all week!

Balsamic Shrimp Salad:
Here’s another great recipe that sneaks a little citrus into a salad, plus shrimp, cheddar cheese, and a healthy handful of Olivia’s Organics Spring Mix. We love the simplicity of the mason jar balsamic vinaigrette dressing. Just shake and enjoy!
