It’s a common misconception that Cinco de Mayo is Mexican Independence Day. It’s not (that’s on September 16). The May 5 holiday commemorates Mexico’s victory at the Battle of Puebla, where it defeated the French in 1862.
Today, Cinco de Mayo has become an opportunity to celebrate Mexican culture. And as you know, no Olivia’s celebration is complete without great food. That’s why we’re devoting this week’s newsletter to some of our favorite recipes inspired by flavors from south of the border. Enjoy!
Mexican Burrito Bowl:
The tortilla that holds a burrito together can easily have more than 200 calories. This recipe skips the wrap and combines all that burrito-y goodness in a bowl. Best of all, it’s vegetarian!
Mason Jar Taco Salad:
Here’s a perfect lunch option for Friday. All the deliciousness of tacos without the fried shells (are you starting to see a pattern here?). The secret to keeping these mason jar salads fresh is to make sure you put the dressing in first.
Fish Tacos with Mango Salsa:
OK, OK, no more bowls or salads. This fish taco recipe calls for tortillas (corn or flour would work), which get stuffed with Cajun fish, creamy avocado mayo and a bright mango salsa. What’s not to love?!
Garden Margarita:
How many green ingredients can you think to put in a single drink? This margarita has FIVE, making it one of the most fun and fresh drinks around. Plus, all those ingredients mean its easy to enjoy a non-alcoholic version!
