Spinach Crepes with Ham & Cheese:
It’s not quite green eggs and ham, but it’s pretty close! This classic flavor combo gets a bright green hue from blending spinach into the crepe batter. Those ultra-thin crepes may not be the easiest skill to master. But like the recipe says, even a mistake will taste good!
Butternut Squash Soup:
This recipe is basically autumn in a bowl, and it’s so easy to make! The butternut squash is the star of the show. And once you try these crispy chickpeas, you might never eat another crouton again!
Spinach and Leek Sauce:
Part of the allium family (garlic, onion, chives), leeks are sweet and mild when cooked and used in many dishes that call for onions. Just boil the dark green tops and toss in the blender with silken tofu, spinach, and olive oil. The result offers a healthy, protein-fueled upgrade you won’t get in other creamy sauces.
