Arugula

Baby Arugula is simply arugula harvested young for its more petit, delicate leaves and flavor. Commonly used as an herb, arugula has a flavorful peppery quality.  Native to the Mediterranean, arugula has long been a popular ingredient in Italian cuisine, but was not widely used in the US until the 1990’s.  Arugula is rich in beta carotene and has more than three times the vitamin C of spinach.
