Wow your holiday guests with ease! Prepare these flavorful salmon skewers ahead of time and grill just before guests arrive.
Add the first 6 ingredients to a small saucepan. Bring to a boil and reduce to a simmer while stirring constantly until sugar is dissolved. Remove 2 tablespoons of the sauce to a bowl, add the cornstarch and mix together well. Stir cornstarch mixture back into the pan and simmer for approximately 10 minutes until sauce thickens, stirring frequently with a whisk. Remove from heat and whisk in the honey. Set aside.
Season the salmon cubes with salt and pepper. Thread the salmon, pineapple, peppers and onions onto skewers beginning with salmon and alternating with all ingredients. Generously brush the skewers with the teriyaki sauce.
Place skewers onto a hot grill for approximately 6 minutes, 3 minutes per side. An indoor grill pan also works well.
Add skewers to a bed of lightly dressed greens, top with sesame seeds and drizzle with extra virgin olive oil.
Tips & Tricks: If using wooden skewers, soak for at least a half hour prior to grilling.
