Creamy Chicken & Spinach

Ingredients
- 2 tablespoons olive oil
 - 4 boneless, skinless chicken breast halves
 - 2 garlic cloves – minced
 - 1 cup roasted red peppers – chopped
 - 1/2 cup chicken broth
 - 1 cup heavy cream
 - 1 tablespoon onion powder
 - 1 tablespoon Italian seasoning
 - 1 cup freshly grated Parmesan cheese
 - 2 packed cups Olivia’s Organics Baby Spinach
 - Salt and pepper to taste
 
Instructions
- Heat oil in a large sauté pan on medium. Season the chicken with salt and pepper and cook on each side until lightly browned. Remove chicken and set aside.
 - Add garlic and peppers to the same pan, and cook for 1 minute while stirring. Stir in the chicken broth and raise heat to medium high. Stir in the heavy cream, onion powder, Italian seasoning and Parmesan cheese until slightly thickened.
 - Lower the heat, add in the spinach and season with salt and pepper as needed. Add chicken back in. Heat until spinach is wilted and chicken is warmed.
 - Serve as is or over pasta or rice.
