A perfectly healthy snack to eat on the go!
Drain chickpeas (reserving the liquid) and place in a medium sized mixing bowl. Roughly mash with a fork (some whole pieces are ok). Add in spinach and scallions as well as ¼ cup reserved liquid and mix thoroughly.
In a separate bowl, whisk together the flour, baking soda and salt. Add the dry ingredients to the chickpea and spinach mix and stir until well combined. Mixture should be easy to form into small 2-3” patties. If mixture is too sticky, add a little more flour, 1 tablespoon at a time. If it is too dry, add a little more chickpea liquid, 1 tablespoon at a time.
Once all the mixture is formed into patties, heat the vegetable oil over medium-high heat in a large sauté pan. When oil is hot and shimmering, gently add patties one at a time, careful not to overcrowd the pan (work in batches). Fry patties until the first side is golden brown and crispy, about 3 minutes. Flip and repeat on the other side. Place cooked patties on a plate lined with a paper towel while frying remaining patties.
Sprinkle with salt and a squeeze of lemon and a bit of yogurt. Enjoy hot or room temperature.
