The perfect pizza doesn't exis ........
Preheat the oven to 425F (or follow directions on dough package).
Bring dough to room temperature. Split dough into two pieces and stretch each piece into a 6” disc. Place side by side on a baking sheet, close but not touching.
In a medium sauté pan over medium heat, heat 2 tablespoons of olive oil. Thinly slice the garlic and sauté until fragrant. Add the artichokes and spinach, season with salt. Cook vegetables until soft but not browned. Spinach should still be fairly bright green, about 3-5 minutes.
Spoon vegetable mixture onto pizzas, distributing evenly. Dollop ricotta on top of veggies and drizzle each pizza with remaining olive oil. Bake for 15-20 minutes or until the crust is golden brown and cheese is melty and golden.
