The chipotles in adobo bring a nice kick to these tacos!
Yield: 2-4 Servings
In a medium saucepan, heat oil over medium heat and add the spinach. Warm through until all the leaves are wilted. Season with salt. Add beans and chipotles and stir to mix, and allow to warm through, stirring occasionally, about 7-10 minutes.
Meanwhile, warm tortillas in a sauté pan or in the microwave, whichever you prefer.
To serve, spoon spinach mixture onto warm tortillas and top with radishes, cilantro, lime juice and shredded cheese.
