Heat butter and oil in a large sauté pan. Cook shrimp for 1 to 2 minutes per side (until pink). Remove from pan and set aside.
Using the same pan, add the corn and cook for a couple minutes. Add in the spinach and season with salt and pepper. Cook until the spinach is wilted.
In the meantime, add the water to a pot and bring to a boil. Add in the ½ teaspoon of salt and the grits, stirring well. Reduce to a simmer and continue cooking for approximately 5 minutes until grits are smooth and creamy. If there’s too much liquid, continue cooking longer.
Remove from heat and stir in the shrimp and spinach/corn mixture.
