Arugula & Cauliflower Salad

If you're looking to try cauliflower rice, this recipe is for you!

Yield: 8 Side Servings

Instructions

Core and chop the cauliflower. Add the cauliflower to a food processor and pulse until it resembles rice. Squeeze the rice in a dish towel to remove moisture.

Heat a large sauté pan with olive oil. Sauté the rice over medium heat for a couple minutes and season with salt and pepper. Cover and steam for a few minutes more. Set aside to cool.

Whisk together the dressing ingredients.

Add the cooled cauliflower, corn, tomatoes, beans, onions, and baby arugula in a large serving bowl. Season with salt and pepper and toss with the dressing.

Tips & Tricks: Save a little time and use fresh or frozen ready-made cauliflower rice. Available in most grocers fresh produce section or freezer section.
