You'll definitely want to add this dish to your soup season lineup!
Yield: 4-6 Servings
In a large pot, heat the olive oil and add the leeks, carrots, and celery. Sauté for 4 to 5 minutes. Add in the garlic and cook for another minute. Season with salt, pepper and thyme.
Add broth and bring to a boil. Reduce to a simmer, add the chicken, and simmer for 20 minutes. Add the orzo and cook for an additional 8 minutes.
Remove from heat and stir in lemon juice.
Serve with fresh parsley and grated Parmesan cheese.
