Spinach Chili

Chef Linda's spinach chili is packed full of nutritious and delicious ingredients! Yield: 4 - 6 servings

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion - diced
  • 1 green bell pepper - chopped
  • 2 garlic cloves - minced
  • 1 lb. ground turkey breast
  • 1 teaspoon chili powder   
  • 1/2 teaspoon ground cayenne pepper
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground paprika
  • 1 tablespoon fresh oregano - chopped
  • Salt and pepper - to taste
  • 1 (28 oz.) can crushed tomatoes
  • 1 (15 oz.) can red kidney beans - drained and rinsed
  • 1 (15 oz.) can great northern white beans - drained and rinsed (or any variety of white beans)
  • 1 cup cooked corn
  • 1 (5 oz.) package of Olivia’s Organics Baby Spinach
  • 1 cup cheddar cheese - shredded
  • 1 cup light sour cream
  • 2 scallions - chopped
  • 1/4 cup cilantro leaves - chopped or torn

Preparation

  • In a large pot, heat olive oil and add onion, green pepper and garlic. Sauté for approximately five minutes.
  • Move the veggies to the side of the pot and add the ground turkey Diced turkey meat would also work. Continue to cook over medium heat until turkey is browned.
  • Add all seasonings to the pot and mix everything to combine.
  • Stir in the crushed tomatoes, both beans and corn. 
  • Bring to a boil and reduce to simmer for approximately 15 minutes. Add the spinach and cook another 5 or so minutes until wilted.
  • Ladle into bowls and top with cheese, scallions, sour cream and cilantro.
