Spinach & Apple Salad

Simple, healthy and beautiful!
Yield: 2-4 Servings

Ingredients

  • 1 (5 oz.) package Olivia’s Organics Baby Spinach
  • 1 apple - sliced 
  • 1 cup fresh blueberries 
  • 1/2 cup walnuts - chopped
  • Apple Cider Vinaigrette
  • 1/4 cup apple cider vinegar 
  • 1 tablespoon fresh lemon juice 
  • 1 teaspoon Dijon mustard 
  • 2 teaspoons honey
  • 1/3 cup extra virgin olive oil 
  • 1 garlic clove - minced
  • Salt and pepper to taste

Preparation

  • Toss together the salad ingredients in a large bowl or platter.
  • Combine all vinaigrette ingredients and mix in a blender or whisk. Drizzle over salad as desired.
  • Refrigerate leftover dressing for up to 1 week.
