The homemade sauce makes this veggie-loaded stir-fry extra yummy!
In a bowl, whisk together the sauce ingredients and set aside.
Season sliced chicken with salt and pepper. In a very large sauté pan, heat oil on medium heat and cook chicken in sections, to avoid overcrowding the pan. Cook just until chicken begins to lightly brown, turn and cook another minute or so. Do not overcook. Repeat with all of the chicken. Remove cooked chicken and set aside.
Add a bit more oil to the pan if needed and add in all vegetables except the spinach. Stir fry until veggies are crisp tender.
Stir in baby spinach, the chicken and sauce. Simmer for a few additional minutes and serve over rice.
