Arugula Fig Salad

Peppery arugula with a little sweet and a little crunch makes for a light and refreshing salad!

Yield: 4 Servings

6-8 fresh figs - quartered
1 apple – peeled and chopped
1 cup walnuts - toasted and chopped
1 (5 oz.) package of Olivia's Organics Baby Arugula
½ cup goat cheese
Salt and pepper to taste
Light dressing of your choice

Instructions

Combine the first 6 ingredients in a bowl and toss. Add dressing and serve!
