- 8 (10 inch) soft flour tortillas (wraps)
- 1 (8 oz.) container roasted red pepper hummus (or your favorite)
- 2 cups Olivia’s Organics Baby Spinach or Sweet Baby Lettuce
- 2 carrots
- 1 small cucumber
- 1 red pepper
- 1 yellow pepper
- red onion - to taste
- Slice all of the veggies into thin strips.
- Lay tortillas out. Spread 1 ounce of hummus on each. Top with spinach or lettuce and lay on the assorted sliced veggies. Roll up tightly and serve.
