Turkey Lettuce Taco's

Delicious and healthy taco's using Olivia's romaine leaves. So fresh and crunchy and good for you!

Ingredients

  • 2 tablespoons olive oil (or Olive Oil spray)
  • 1 lb ground turkey
  • 1 packet organic taco seasoning mix (or make your own - see below *)
  • 1 (4.25oz) can green chilies
  • 1 cup of your favorite fresh salsa (ours is Olivia’s Spinach Tomato Salsa)
  • 1 (15.5oz) can black beans - drained and rinsed
  • 1 cup frozen corn - cooked according to package directions
  • 1 (7oz) package of Olivia's Organic Romaine Leaves
  • 1/2 cup Greek yogurt - optional

* Taco seasoning mix – combine together well

  • 1/2 tablespoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon crushed dried red pepper flakes
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon ground oregano
  • 1/4 teaspoon dried marjoram
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon cornstarch
  • 1/2 teaspoon garlic powder

Preparation

  • Heat olive oil or spray in sauté pan. Add the turkey and cook, using a spatula to break up the meat. Stir in the taco seasoning and cook for 10 minutes, stirring often until turkey is cooked through. Add the chilies and salsa and cook until heated through. Stir in the black beans and corn.
  • To assemble taco’s, line a plate with lettuce leaves and fill with turkey mixture. Top with a dollop of yogurt and serve with extra fresh salsa.
