Teriyaki Salmon Skewers

Wow your holiday guests with ease! Prepare these flavorful salmon skewers ahead of time and grill just before guests arrive.


  • 1/2 cup soy sauce
  • 2 tablespoons mirin
  • 2 teaspoons ground ginger
  • 1 teaspoon garlic powder
  • 1/4 cup brown sugar
  • 1/4 cup water
  • 2 teaspoons cornstarch
  • 1 tablespoon organic honey
  • 1 pound salmon - cut into 2 inch cubes
  • Salt and pepper - to taste
  • 1 cup pineapple - cut into 2 inch pieces
  • 1/2 cup colorful bell peppers - cut into 2 inch pieces
  • 1/2 cup red onion - cut into 2 inch pieces
  • 2 cups Olivia's Organics Spring Mix (or your favorite Olivia’s greens)
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons sesame seeds
  • 4 to 6 metal or wooden skewers


  • *If using wooden skewers, soak for at least a half hour prior to grilling
  • Make the Teriyaki sauce: Add the first 6 ingredients to a small saucepan. Bring to a boil and reduce to a simmer while stirring constantly until sugar is dissolved. Remove 2 tablespoons of the sauce to a bowl with the cornstarch and mix together well. Stir cornstarch mixture back into the pan and simmer for approximately 10 minutes until sauce thickens, stirring frequently with a whisk. Remove from heat and whisk in the honey. Set aside. 
  • Season the salmon cubes with salt and pepper. Thread the salmon, pineapple, peppers and onions onto skewers beginning with salmon and alternating with all ingredients. Generously brush the skewers with the teriyaki sauce. 
  • Place skewers onto a hot grill for approximately 6 minutes, 3 minutes per side. You can also prepare this using an indoor grill pan. 
  • Add skewers to a bed of lightly dressed greens, top with sesame seeds and drizzle with extra virgin olive oil.
