- 4 handfuls Olivia's Organics Arugula
- 2 tablespoons extra virgin olive oil
- 1 tablespoon freshly squeezed lemon
- Salt and pepper to taste
- 12 slices of prosciutto
- 12 small thin pieces pecorino
- In a bowl, toss together the Arugula, olive oil, lemon juice, salt and pepper.
- Lay out a slice of prosciutto the long way. Add a small amount of the arugula, top with a piece of cheese and roll up. Repeat with the remaining ingredients.
- Drizzle with extra virgin olive oil and serve.
