Prosciutto wrapped Arugula

Incredible flavors and beautiful presentation. Inspired by Chef Linda's recent trip to italy. Yield: 12 rolls


  • 4 handfuls Olivia's Organics Arugula
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon freshly squeezed lemon
  • Salt and pepper to taste
  • 12 slices of prosciutto
  • 12 small thin pieces pecorino


  • In a bowl, toss together the Arugula, olive oil, lemon juice, salt and pepper.
  • Lay out a slice of prosciutto the long way. Add a small amount of the arugula, top with a piece of cheese and roll up. Repeat with the remaining ingredients.
  • Drizzle with extra virgin olive oil and serve.
