Potato Egg Salad

Everyone's favorite side dish is eggscellent served warm or chilled. Yields: 8 servings

Ingredients

  • 2 lbs. golden baby potatoes
  • 1/4 cup red onion – finely chopped
  • 1/2 cup Olivia’s Organics Celery - diced
  • 1/2 cup Light mayo
  • 4 slices cooked turkey bacon - chopped
  • 2 large boiled eggs - chopped
  • Salt and pepper - to taste

Preparation

  • Wash and cut potatoes in half. Place in a pot of cold water and bring to a boil. Lower the heat and cook for approximately 20 minutes or until tender. Drain and set aside to cool.
  • In a large bowl, add all remaining ingredients and mix together. Stir in potatoes, season with salt and pepper, and serve.
