- 2 lbs. golden baby potatoes
- 1/4 cup red onion – finely chopped
- 1/2 cup Olivia’s Organics Celery - diced
- 1/2 cup Light mayo
- 4 slices cooked turkey bacon - chopped
- 2 large boiled eggs - chopped
- Salt and pepper to taste
- Wash and cut potatoes in half. Place in a pot of cold water and bring to a boil. Lower the heat and cook for approximately 20 minutes or until tender. Drain and set aside to cool.
- In a large bowl, add all remaining ingredients and mix together. Stir in potatoes, season with salt and pepper, and serve.
