Lighter Creamed Spinach

Enjoy this delectable side dish at your holiday table, or classically paired with a delicious steak. Yield: 4 servings


  • 2 tablespoons unsalted butter
  • 1 small onion - diced
  • 2 cloves garlic - minced
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups skim milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1/4 teaspoon nutmeg
  • 4 ounces of fat free cream cheese
  • 2 tablespoons freshly grated Parmesan cheese
  • 1 (16 oz) package Olivia's Organics Baby Spinach


  • Melt butter in a large sauté pan. Add onion and cook for approximately 5 minutes. Add garlic and stir for 1 minute more. Stir in flour and stir to mix well for another minute. Slowly add the milk while stirring until it begins to thicken and form a sauce. Add seasonings, cream cheese and Parmesan cheese and stir well to combine. Add Spinach and continue stirring until spinach is wilted and cooked to desired tenderness.
