Lighter Creamed Spinach

Enjoy this delectable side dish at your holiday table, or classically paired with a delicious steak. Yield: 4 servings


  • 2 tablespoons unsalted butter
  • 1 small onion - diced
  • 2 cloves garlic - minced
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups skim milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1/4 teaspoon nutmeg
  • 4 ounces of fat free cream cheese
  • 2 tablespoons freshly grated Parmesan cheese
  • 1 (16oz) package Olivia's Organics Baby Spinach


  • Melt butter in a large sauté pan. Add onion and cook for approximately five minutes. Add garlic and stir for one minute more. Stir in flour and stir to mix well for another minute. Slowly add the milk while stirring until it begins to thicken and form a sauce. Add seasonings, cream cheese and Parmesan cheese and stir well to combine. Add Spinach and continue stirring until spinach is wilted and cooked to desired tenderness.
