Kale Salad with Blood Oranges

Insalata Fresca... as gorgeous as it is delicious!

Ingredients

  • 2 cups Olivia's Organics Baby Kale
  • 1/2 cup artichoke hearts - halved
  • 1/4 cup thinly sliced red onion
  • 1 blood orange – peeled and sliced into wheels
  • 1/4 cup grape tomatoes - halved
  • Salt & pepper - to taste
  • Drizzle of extra virgin olive oil

 

Preparation

  • Arrange all ingredients on a plate, season with salt and pepper, drizzle with olive oil and serve.
