- 2 cups Olivia's Organics Baby Kale
- 1/2 cup artichoke hearts - halved
- 1/4 cup thinly sliced red onion
- 1 blood orange – peeled and sliced into wheels
- 1/4 cup grape tomatoes - halved
- Salt & pepper - to taste
- Drizzle of extra virgin olive oil
- Arrange all ingredients on a plate, season with salt and pepper, drizzle with olive oil and serve.
