Healthy Salmon Spinach Burger

Just 20 minutes of prep to whip up fresh and healthy salmon burgers! ... double the yogurt, lemon, dill dressing. It's that good!

  • 1 (5oz) package of Olivia's Organics Baby Spinach
  • 1 pound salmon fillet - skin and small bones removed
  • 1/2 cup panko (Japanese bread crumbs)
  • 1 large egg
  • 2 cloves garlic - minced
  • 4 scallions - minced
  • 1 teaspoon fresh ginger - grated
  • 1 teaspoon soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 2 tablespoons olive oil
  • 1/4 fat free Greek yogurt
  • 1 teaspoon lemon juice
  • 1 teaspoon fresh dill - chopped
  • 4 whole wheat buns


  • In a large pan of boiling water with salt added, add spinach and cook for 2-3 minutes. Remove, drain and let cool. Once cooled, place in a dish towel and squeeze out the liquid. Set aside.
  • With a sharp knife, mince the salmon fillet.
  • In a large bowl, mix the minced salmon together with the cooled spinach, panko, egg, garlic, scallions, ginger, soy sauce, salt and pepper.
  • Form mixture into 4 burgers. Place burgers in refrigerator for about one hour.
  • Heat a large sauté pan with 2 tablespoons olive oil on medium high. Add the salmon burgers and cook for 2-3 minutes per side, until browned.
  • In a separate bowl, mix together yogurt, lemon juice and dill. Serve on top of burger.
