Chopped Salad

This salad hits all the notes and was a huge crowd pleaser in Chef Linda’s test kitchen.


  • 1 (7 oz.) package of Olivia's Organics Romaine Leaves
  • 2 Olivia's Organics Celery stalks
  • 1 small head of radicchio
  • 1-pint container grape tomatoes - halved
  • 1/2 cup smoked Gouda - diced
  • 4 slices bacon - cooked and crumbled
  • 1/4 cup red onion – diced small
  • 1 (14 oz.) can chickpeas - drained and rinsed
  • Salt and pepper to taste


  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste


  • Small chop the romaine, celery and radicchio. Mix together in a large serving bowl with the remaining salad ingredients.
  • For the vinaigrette: Whisk together the lemon juice and Dijon. Slowly whisk in the oil, and season with salt and pepper.
  • Dress the salad and toss and serve.
