Chicken with Kale and Peppers

Our Chopped Kale adds convenience to this colorful and healthy dish. Total time to prepare this nutrient packed meal is just 45 minutes and serves 4.

3 boneless skinless chicken breasts (cut in 2 inch cubes)
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon pepper
2 garlic cloves - minced
4 tablespoons olive oil
1 small onion - chopped
1/2 red pepper - sliced
1/2 orange pepper - sliced
1/2 yellow pepper - sliced
1 (9oz) bag Olivia’s Chopped Kale


Combine chicken cubes, cumin, salt, pepper and garlic in a bowl and mix together. Set aside.

Prep the vegetables and set aside.

Heat 2 tablespoons olive oil in a large sauté pan and add chicken. Cook for 5-7 minutes turning to brown all sides. When cooked through, remove chicken from pan.

To the same pan, add 2 tablespoons of olive oil, add onion and cook for 5 minutes. Add peppers and continue to cook for another 5 minutes. Add the kale, mixing together and cook another 10 minutes. Season with salt and pepper to taste. Add chicken back to pan, mix with the vegetables and warm the chicken through, just a minute or two.
