Chicken Orzo Soup with Spinach

Quick cooking and good for you soup! Total time is 30 minutes. Pair with a simple salad made with Olivia's greens.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion - diced
  • 3 carrots - diced
  • 2 Olivia's Organics celery stalks - diced
  • 2 cloves garlic - minced
  • 1 rotisserie chicken – remove meat and cut up
  • 6 cups chicken stock
  • 1 cup orzo - uncooked
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • 4 cups of Olivia's Organics Baby Spinach (chopped)
  • Salt and pepper to taste

Preparation

  • Heat olive oil in a large soup pot.
  • Add the onion, carrots, celery and garlic and cook for 5-7 minutes until soft.
  • Add chicken stock and bring to a boil.
  • Add orzo, cooked chicken and thyme, stirring to combine. Reduce heat and simmer for 10 minutes.
  • Stir in spinach and cook for an additional 2 minutes.
  • Season with salt and pepper.
