Chicken & Guacamole Burger

It's burger season and Chef Linda has hooked us up! Is there anything better than a burger AND Guacamole?!?

Ingredients

  • 1 pound ground chicken breast
  • 1 cup Olivia's Organics Baby Spinach - chopped
  • 1 small onion - diced
  • 1 clove garlic - minced
  • 1 teaspoon fresh basil - chopped
  • 2 teaspoons dried thyme
  • 1/2 cup corn meal
  • Salt and pepper - to taste
  • 2 tablespoons olive oil
  • Whole wheat rolls toasted
  • Olivia's Organics Spring Mix

Guacamole

  • 1 avocado - mashed
  • 1 lime - squeezed
  • 1/4 cup grape tomatoes - chopped
  • Salt and pepper - to taste

Preparation

  • Mix together the first 8 ingredients and shape into patties. Place on a plate and refrigerate for 30 minutes.
  • Heat sauté pan with olive oil and cook burgers 4 to 5 minutes each side, and until chicken is cooked through.
  • Guacamole: mash the avocado with a fork - keeping it a little chunky, add lime juice, chopped tomatoes and season with salt & pepper.
  • Serve burgers on rolls with Spring Mix and top with guacamole.
