Butternut Squash Skewers

Unique bites of delicious butternut squash! A simple, elegant and healthy vegan appetizer! 


  • 3 cups Olivia's Organics Butternut Squash - cut into1 inch dice
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper - to taste
  • 2 tablespoons fresh sage – chopped
  • Small wooden skewers


  • Preheat oven to 450 degrees F. 
  • Toss the squash with the olive oil, salt and pepper and place on a sheet pan. Roast for 30 minutes. 
  • Once cooled, thread 3 pieces to a wooden skewer and repeat. Plate skewers and top with chopped sage.
