- 3 cups Olivia's Organics Butternut Squash - cut into1 inch dice
- 2 tablespoons extra virgin olive oil
- Salt and pepper - to taste
- 2 tablespoons fresh sage – chopped
- Small wooden skewers
- Preheat oven to 450 degrees F.
- Toss the squash with the olive oil, salt and pepper and place on a sheet pan. Roast for 30 minutes.
- Once cooled, thread 3 pieces to a wooden skewer and repeat. Plate skewers and top with chopped sage.
