Recipe courtesy of Chef Linda Duggan.

Ingredients

1 (7 oz) wheel of brie cheese
1/4 cup dried cranberries
1/4 cup pecans
Drizzle of honey
1 to 2 cups baby spinach

Preparation

Preheat oven to 350 degrees.

Place brie in an oven safe pan and bake for 10 minutes.

In the meantime, toast pecans for only a couple of minutes until you smell the wonderful aroma. Cool and chop into small pieces.

Arrange spinach on a serving platter.

Take the brie out of the oven. Using a large spatula, carefully move the brie from the pan (working to keep it together) and place it in the middle of the platter, on top of the spinach. Top the warmed brie with the dried cranberries and chopped pecans and drizzle it with honey.

Serve with your favorite crackers. Scoop a bit of brie onto a cracker topped with spinach.
