Baby Caesar Salad

Baby Butter lettuce is perfect with Chef Linda's lighter Caesar dressing
Yield: 4 Servings


  • 4 cups Olivia’s Organics Baby Butter Lettuce
  • 1/4 cup red onion - thinly sliced 
  • 1 cup Garbanzo beans
  • 1/2 cup shaved Parmesan cheese
  • Salt and pepper to taste
Lighter Caesar salad dressing
  • 1/3 cup nonfat Greek yogurt
  • 1 teaspoon anchovy paste
  • 1 clove garlic - minced
  • 2 tablespoons lemon juice
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 2 tablespoons extra virgin olive oil
  • 1/3 cup grated Parmesan cheese 


  • Make the dressing: Whisk together the yogurt, anchovy paste, garlic, lemon juice, Worcestershire sauce, salt and pepper. Drizzle in the oil while whisking. Stir in the grated cheese.
  • Assemble the salad: Arrange lettuce, red onion and garbanzo beans onto 4 plates, top each with shaved Parmesan and season with salt and pepper. Top with dressing or serve on the side.
