Arugula, Fennel & Orange Salad

This refreshing salad makes an elegant and easy first course.


  • 3 tablespoons fresh lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon aged balsamic
  • Salt and pepper - to taste
  • 1 (5oz) package of Olivia's Organics Baby Arugula (use amount desired)
  • 1 fennel bulb - sliced very thin
  • 1 large orange - peeled and sliced
  • 1/2 red onion - sliced very thin


  • In a large bowl, whisk together the lemon juice, olive oil, balsamic vinegar, salt and pepper.
  • Arrange salad ingredients on a plate as desired and drizzle with dressing.
